Tantanmen! The broth is relatively light made out of chicken bones and mussel dashi (made with fresh mussels and dried bonito flakes). As a result you get a super complex and deep soup with an intensely "meaty" aroma - you don't notice any seafood at all, you just feel that there is more than just chicken/ pork. The seasoning is a mixture of sesame paste and a soy sauce Tare with a little bit of vinegar - adding some creaminess and richness to the broth. My highlight, however, is the homemade chilli oil, which is packed with flavor of Habanero chili peppers. For me it has just the right level of heat, so that you can fully enjoy that amazing floral/ fruity aroma.

Berlin-Mitte

Each Ramen kit includes soup, noodles and toppings for 1 portion of Ramen - you just need to boil noodles for around 1 minute, heat up soup and put everything together (find detailed instructions here).

Pick up location is at “Zionskirchplatz” in Mitte, where I’ll drop the kits directly from my apartment in the 2nd floor.

Entering a new era of Japanese homecooking with my amazing new toy: a „Katsuobushi Kezuri“ or „Bonito“ slicer for shaving fresh „Katsuobushi“ flakes at home - obviously you also need a block of the actual „Katsuobushi“, which is a very hard piece of dried fermented „Bonito“ fillet. You then get these beautifully pink little flakes! Just compare them to the pale/ brownish prepackaged stuff you find in the supermarket. The smell is quite different as well ... way more intense! I believe that its going to be much more powerful, then when using the standard flakes as a lot of the aroma is lost over time when already cut.
