What is Food Technique Berlin?

Food Technique Berlin is a ghost kitchen specializing on high quality Ramen, run by me, Christopher Selig. Currently my Ramen are only sold Ramen Kits for take away - there is no permanent brick and mortar location. However, I do popups at partner restaurants in Berlin and other cities (Hamburg for example) on a regular basis. I also organize events with guest chefs from Japan like with Hiromitsu Mizuhara from award-winning Koike in Tokyo. Check out my Instagram account or newsletter (subscribe here) for updates.

How do I order a Ramen Kit?

Before each Ramen Kit sale (almost every week) my newsletter (subscribe here) is sent out with the current menu (and prices). You can order directly via email once you have received the newsletter. If any Ramen Kits are left that week, the sale will also be announced via my Instagram account.

What makes your Ramen Kits so special?

I speciazile on lighter, more balanced soups. The recipes have been developed and continuously improved for years. All components of my Ramen kits are homemade using ingredients you often find in Japan, but rarely in Germany. For instance, the soup of the Tantanmen and Shoyu Ramen are made with fresh mussels, Bonito flakes, pork bones and stewing hens to give it more depth and complexity. For the seasoning of the Shoyu Ramen also fresh oysters are used. The vegan Ramen are made with a variety of fresh mushrooms (instead of using cheap soy or other processed meat alternatives).

What exactly is a Ramen Kit?

Its a prepacked bowl of Ramen, which you need to put together at home by heating the soup and boiling the noodles.

How long does it take to put together?

It really only takes 5-10 minutes to heat up soup, boil noodles (1-3 minutes depending on noodles thickness) and add toppings.

Do I need to prepare the Ramen Kit right away?

No, since all components are freshly prepared, you can keep it in the fridge for 24 hours. Or even for 48 hours if you don’t mind the fresh greens/ herbs of the kits not to slightly wilt.

What is the price per Ramen Kit?

Each Ramen Kit costs €16. You get soup, noodles, a variety of toppings (including whole marinated egg). All components are all freshly made every week (no MSG used).

Why are the Ramen Kits so expensive with €16?

ALL compenents (even noodles) are homemade using more expensive ingredients. For exampe, the soup of the Tantanmen and Shoyu Ramen is made with fresh mussels and whole stewing hens. The vegan Ramen are made with a variety of fresh mushrooms (instead of using cheap soy or other processed meat alternatives). All Ramen Kits come with a variety of toppings, which you often have to pay extra at others shops.

Do you also have a shop where I can eat your Ramen?

No, at the moment I sell my Ramen only as Ramen Kits for take away. However, from time to time I organize events and popups, where I either cook myself or with guests chefs (from Berlin or abroad).
